4 c chopped watermelon
¼ t salt
¼ c simple syrup (½ c sugar, ¼ c water)
1 T fresh squeezed lemon juice
2-3 mint leaves
Directions:
Blend all ingredients with ice on “frozen drink” setting of
blender or until smooth.
Fill glass half full with watermelon mixture and top with
champagne or sparkling water.
Garnish with fresh mint and watermelon wedges.
